My early days preserving food were simply a way for me to make delicious gifts – jams, pickles, chutneys and sauces. I was a working mum, my children were young and I was very conscious of what we were eating. But life was busy, and like many families, we were reaching for takeaways, eating out or making extra supermarket trips far too often.
At the time, I was working in food, as both an academic and later within the food industry. I saw firsthand how food is produced (the good and the bad) and wanted a better way for my family. We started growing some of our food, which naturally led to a desire to preserve more.
Then 2020 arrived and our lives changed. A pandemic, major health issues in our family, and I bought a pressure canner. Life as we knew it changed... and I actually think for the better.
I started canning meats, vegetables and, eventually, lots of meals in jars. Suddenly the 5 pm "What's for dinner?" mental load disappeared. Even while juggling growing businesses, homeschooling, and a long list of dietary restrictions, feeding everyone well became easier because of my preserver's kitchen – a bulk food pantry, shelves filled with meals, and food growing just outside.
People talk about the "ping" of jars sealing, but the real joy is in the "woosh" when opening the jars. That sound means a delicious, healthy meal will be on the table in 10 minutes – no stress, just easy cooking. And that's why I believe preserving food is for everyone.
It's not just for someone on a homestead – you don't even need to grow your own food. It's for the busy mum carrying the dinnertime mental load, the person wanting more control and security around their food supply and what's in their food, and the person who simply loves the creative process of making good food. I'm the founder of Patch to Pantry and The Preserver's Kitchen, where I've helped over 4,000 beginner preservers to confidently and safely preserve food at home.
Before creating Patch to Pantry, I spent almost two decades teaching engineering to university students studying Food Technology, as well as working in the food industry.
Today, I live on a quarter-acre section in Gisborne, New Zealand, with my husband and two daughters. I'm not preserving food on a large homestead or trying to grow or make everything from scratch – I'm fitting it around family life, work and a busy home.
I strongly believe that having more control over our food supply and eating healthier food builds stronger, more resilient communities. Preserving your own food is a big part of that – and it isn't something reserved for homesteaders. It is the best way to create easier, more nourishing mealtimes, and improve your security along the way. No stockpiling needed.
